I LOVE chicken salad, especially California chicken salad with the grapes, apples, pecans, and real mayo, BUT as you all know, mayo isn't the most healthy thing in the world. But avocado is! I found a recipe on Pinterest that substituted avocado for mayo but then had onions and cilantro I think among other things, that wasn't really for me. So, I took the avocado idea and ran with it!
What I used:
3 1/2 grilled chicken tenders (no seasoning, just plain - Tyson frozen tenders)
Lime juice to taste
Dash of salt and pepper (or to taste but more salt = less healthy!)
Mash up the avocado, and add the chicken, I shredded mine, you may want yours cubed/chunky, but the shredded mixed in really well. Add lime juice (you could use lemon if you like), salt and pepper, and halved grapes, as many as you like. I put a bunch because I like a grape with each bite. Then mix together! SUPER simple! And DELICIOUS!
